**Janis Thiessen** is Professor of History at The University of Winnipeg and leads the [Manitoba Food History Project](https://www.manitobafoodhistory.ca/). They are the author of several books including [Snacks: A Canadian Food History](https://uofmpress.ca/books/snacks).

**Mary Jane McCallum** is Professor of History and Canada Research Chair in Indigenous History, People, and Archives, at The University of Winnipeg.
