Janis Thiessen is Professor of History at The University of Winnipeg and leads the Manitoba Food History Project. They are the author of several books including Snacks: A Canadian Food History. 

Mary Jane McCallum is Professor of History and Canada Research Chair in Indigenous History, People, and Archives, at The University of Winnipeg.
